Broccoli Salad - 31 Days of Salads

I first had this salad at a work potluck lunch and it quickly became a favorite of mine. Even with grocery store shortcuts, it's a tasty and affordable salad that is a big hit at any picnic.

INGREDIENTS:

  • (3) Bunches of Broccoli - Cut into Small Florets
  • (2) Packages Real Bacon Pieces
  • (1) Package Dried Cranberries
  • (1) Cup Salted Sunflower Seed Kernels
  • (8) oz. Package Shredded Cheddar (We Use Aldi Triple Cheddar)
  • (1) Large Red Onion - Thinly Sliced and Diced
  • (2) Cups Whipped Salad Dressing
  • (2) Cups Red Wine Vinegar
  • (2) Cups Granulated Sugar (Adjust To Taste)
  • Cracked Black Pepper To Taste

INSTRUCTIONS:

Combine Whipped Salad Dressing, Red Wine Vinegar, and Sugar. Whisk until Sugar is dissolved and dressing is smooth. Marry dressing to remaining ingredients, toss and cover. May be eaten immediately, but it's better refrigerated for a few hours to overnight. Enjoy!
